We had the pleasure of sharing this incredible coffee from Finca Lugmapata and our partners at Huma Coffee. This coffee is a Sidra variety, a native Ecuadorian variety developed as part of a genetic improvement project carried out in Ecuador around the year 2000. The coffee was processed using an anaerobic washed method. After depulping, the beans were fermented in sealed tanks without oxygen to enhance flavor complexity, then fully washed and dried.
This offering from Ecuador is an absolutely stunning example of precise fermentation and processing that compliments the expressive and intense characteristics of the Sidra variety.
